Binita Das is a 25 years old Bengali girl who is brave and blessed to pursue her passion as a profession after her B.Tech. She is a strong-minded girl with the courage to take up her passion and live it and shape it with her hard work and willingness to achieve more every single day of her life.
If enthusiasm and passion are present, people tend to be more resilient when encountering obstacles. People who are passionate about what they do, rather than just “in it for the money,” tend to be people who have more positive outlooks and can overcome difficulty through problem-solving.
Similarly, Binita Das also believes that one should cherish each moment and life whether good or bad because every phase is a teaching lesson that teaches you and helps you grow as a person.
Icy Tales is in conversation with Binita Das about her passions, how she became a cook with all specialties in Bengali cuisine dishes, and much more.
Q) How do you describe your style of cooking?
Binita Das: Homely and passionate.
Q) Which is the dish you call your Signature dish?
Binita Das: I’ve never thought about that. I don’t have a signature dish yet.
Q) Is there a Chef you truly admire and why?
Binita Das: That chef has to be my mother. I never got lucky enough to learn cooking from my grandmother’s cs. I lost them when I was very little. I’ve learned the fundamentals from my mother only. I admire how she makes everything look effortless even when she’s not in her best form.
Q) What is your favorite meal? Do you have a guilty food pleasure?
Binita Das: My favorite meal would be anything homely, seasonal, and of course, flavourful. It doesn’t have to be Bengali, even Indian, for that matter. Although I don’t feel guilty for eating anything, it would be a bowl of instant ramen any day.
Q) How do you see the food scene changing in India?
Binita Das: I’d love to see more people exploring their roots as much as I like to see them trying foods from other parts of the world.
Q) With international ingredients now so easily available, how do you see the Indian market growing?
Binita Das: Things might be available online or in supermarkets. But they are not accessible to small towns, and even if they are, they can get quite expensive sometimes. So, I think we will do better with time.
Q) If you could have one present in the world for Christmas, what would it be and why?
Binita Das: It might need 500 pages to explain why so I don’t want to go in there. But I could use an opportunity to meet Min Yoongi.
Q) Many chefs left the industry post-Covid – what made you stay?
Binita Das: I discovered myself during covid and realized cooking and learning about food was not just a hobby.
Q) The hospitality industry, as well as other industries, has had it rough after Covid. What would be your advice to youngsters seeking a career in this industry?
Binita Das: Every field has its struggles, and you have to face them no matter what. So choose something that you like and are willing to hustle for. No job is small or unimportant, so please respect your job since it brings you food on your table.
Q) Outside of business, tell me a little bit more about family life and how you spend your time relaxing.
Binita Das: I live with my parents and my sister. I don’t go out much. So when I’m free, I like to rot in my bed the whole day, eat a lot of junk and watch as many episodes of Kdramas and animes as possible.
Q) Where do you find inspiration for your dishes?
Binita Das: daily life, people around me, movies, and tv shows.
Q) When and how did you decide you wanted to do this for the rest of your life?
Binita Das: I’ve just started with the content creation. I’m just going with the flow. IDK what the future holds for me. so, not sure if I’m gonna do this for the rest of my life.
Q) How do you define success as a chef? According to you, what is your biggest moment of success?
Binita Das: I love when people try my recipes and share the stories attached to them. It makes me feel so honored and loved.
Q) At what time of the day are you at your best?
Binita Das: I’m a night owl. So, I’m highly energetic from late morning till 2-3 am.
Q) What’s your current obsession?
Binita Das: My obsession with a good cup of coffee(iced americano/ latte/ mocha)has grown a lot. Latte and mocha for the winter. Otherwise, I’m a strict iced americano person with a doppio.
Plus I’ve been watching a lot of thriller K-dramas and I’m loving them so much. Also, don’t forget Yoongi. haha.
Q) What’s the best advice you’ve received?
Binita Das: My father always reminds me of the importance of discipline in life. I just try to stay disciplined and consistent as much as I can. It has always worked for me.
otherwise, I’m very optimistic. So, even when things are difficult, I low-key know that things will get better for good. So, I just try to embrace all the emotions during those times and be patient.

Q) Which memento from your career will you never discard?

Binita Das: I’ll discard nothing. Not even the hardest day. I’ll cherish all my good and not-so-good decisions, missed and taken opportunities, EVERYTHING.
All the learning from my journey has shaped me as a person so well and it’s still doing it every single day. I will keep everything to myself.
Q) How do you navigate the professional cooking industry? What are your favorite and least favorite parts of this industry?
Binita Das: I don’t have much idea about the professional cooking industry so I’m not the right fit to answer that.
Q) What’s your golden rule when creating a piece of work?
Binita Das: Stay true to the audience. Give my best to every piece of content.
Q) Name a place that always inspires you, the dishes you like the best, and why?
Binita Das: I traveled to Darjeeling last year and it taught me to live freely. Like I could feel the words echoing “you’ll figure out everything. life is beautiful so “LIVE IT” in the air, there. I love the place so much.
Plus the momos there. Especially, the pork momos in a small Tibetan restaurant called Kunga. I could die for their momos. It’s that good.
Q) Lastly, tell us three ingredients you can’t live without
Binita Das: This is easy. They are Salt, Sugar, and Garlic.
