Pie Crust for Chocolate Pie

For any good pie, we need a good, flaky, crisp, crunchy pie crust. Nobody would desire a soggy pie crust. The blind-baked pie crust is all we need for that flakiness in every bite.

For Pie Crust We Need:-

255g Plain or all-purpose flour

1 1/2 tablespoon of granulated sugar

1/2 tsp of salt

170g unsalted butter

5 1/2 cup of ice-cold water

Pie Crust Recipe

Firstly, combine all the dry ingredients with the help of a whisk. Add 225g of plain flour to a bowl, on that put in 1 tbsp of sugar and mentioned amount of salt. Whisk it all altogether.

Accordingly, start adding chilled butter cubes each time. Break the butter while mixing it with flour. When the flour mixture turned into a sand-like texture you need to begin drizzling ice-cold water till the mixture gets combined.

Now put the dough on a flat platform. Play with your hands and push and flatten the dough to make it a ball, don’t knead the dough simply combine it properly. Cover the dough with plastic wrap. Set it in the refrigerator for about 2 hours or overnight.

After grabbing it out of the fridge roll it down and flatten it to 2/3″ thickness with the help of a rolling pin. Drape it around the rolling pin and carefully unwrap it and sweep it onto the pie dish. The cracked dough can be easily sealed by pinching the dough together.

Trim off the excess dough hanging around the perimeters of the pie dish and fold the top edge remaining or desired on the crimp to make it a lovely crunchy, and crisp crust. Freeze it for 2 hours or more. Preheat the oven to 400F or 200C.

Pierce the bottom of the dough and all around the sides of a pie with the help of a fork or any pointy kitchen tool so that it doesn’t get puffed up.

Lay the parchment paper over the pie and put some weight on top of it like kidney beans or rice any heavy grain could work. Now bake the crust until it gets golden brown on the edges and lift the parchment carefully to check on the bottom after 30 to 35 minutes.

Take the pie crust out of the oven, and remove the weights and parchment paper. Reduce the temperature to 300F and bake it for about 10 to 15 minutes until the pie crust is evenly chestnut brown all over. You could use this pie crust in any of the 4 decadent chocolate pie recipes mentioned.

Begin with melting 170grams of 70% dark chocolate in a bowl. Melt it in an oven for 30 seconds. Keep it aside. Then break your eggs both egg yolks and whites in a bowl.

Traditionally, eggs were used raw but we’ll be meticulous and cook our eggs on the double boiler where we put a saucepan filled with an inch of water on a stove and put our bowl of eggs on the top of the saucepan.

Whisk whisk whisk… whisk constantly till the eggs get a fluffy and creamy texture. Then switch off the flame. Pour melted chocolate into the eggs. Add 1 tsp of salt to the mix. To that pour 1 tsp of vanilla extract. Combine all till it gets built-in well.

After that add 100grams of butter to a separate bowl and whisk constantly till it gets creamy. Then add the small amount of a pudding to the butter so that it incorporates slowly. Then add the remaining pudding to the butter to whip them together. Scrape the sides so that all the mixture gets incorporated.

Now the last step that remains for chocolate pudding is the whipped cream. In a separate bowl whisk, 225grams of double cream or heavy cream into that add 10 grams of icing sugar and we are gonna whisk those till soft peaks form.

So now it’s time to fold the heavy cream into the pudding filling. Star with a small blob of the heavy cream mixture to the chocolate pudding. Scrape the sides to mix it all.

Just fold it through the cream and the chocolate pudding. Add all the leftover cream to the mixer. Just fold it in and you will see the luscious silky chocolate filling.

Now time for the best part, pour pie filling into the prepared pie crust. Just bounce it around with the spatula to even it out.

Now it’s time for it to set. It needs to be fully set in the fridge for 4 hours or more.
